TATAKI OF  BEEF WITH TOASTED SESAME SEEDS AND SPICES

Ingredients

500g of beef rump or venison
1 ½ teaspoons of toasted sesame seasoning
¼ teaspoons of crushed dried chilli
2 teaspoons of olive oil
Salt and freshly ground black pepper

FOR THE DRESSING
100ml of olive oil
2 x tablespoons of white wine vinegar
2 x tablespoons of runny honey
1 x tablespoon of Japanese soy sauce
Salt and freshly ground black pepper

1 fresh red chilli de-seeded and finely chopped
3 spring onions finely sliced
4 sprigs of coriander picked
1 x 3cm piece of ginger cut into thin matchsticks
2 tablespoons of toasted sesame seeds

Description

You could serve this great beef dish individually, with some mixed peppery leaves or maybe some cucumber and torn mint.  These additions would make it more of a substantial salad.

Method

Trim the meat of any sinew, you could use venison or beef for this dish.  Cut the meat into long 5cm diameter pieces so that the meat can be seared on all sides and rare in the middle.  Rub the meat with a little oil and season with salt and black pepper.  Roll the meat in the sesame seasoning and dried chilli.

Heat a heavy-based frying pan or a griddle pan and sear the meat for 2 minutes on each side and then remove from the pan.  Allow the meat to cool slightly and then wrap tightly in cling film and place in the freezer for 30 minutes.  This will firm the texture and make it much easier to slice into thin slices. 

Meanwhile mix the  dressing: Finely chop the chilli and  spring onions and pick the coriander.  Cut the ginger into  thin slices and then into thin matchsticks.  

Remove the meat from the freezer and unwrap.  With a very sharp knife slice cross ways into thin slices.  Arrange on a large serving platter and drizzle over the dressing.

Scatter over the garnish ingredients and then the sesame seeds and coriander, for a very striking dish.  .
