Asian-flavoured Meatloaf with Coconut and Coriander Cabbage
The meatloaf recipe has hints of Asian flavourings to bring an unusual twist to this traditional family recipe. The combination of cabbage, sweet coconut and mint to accompany the meatloaf is something I dreamed up a few years ago. At the time I thought I was highly original, but then I was in Sydney Phillips Searle served a very similar version in his restaurant. This showed me that with food, there’s nothing new under the sun.
Beef and Spinach Empanadas
Even holidays are like work for a curious cook. We took our grown-up children on a Caribbean cruise a few years ago and I was fascinated by the food we found at all the ports of call. These little tasty pastries are inspired by some Jamaican patties filled with vegetables and meat that we ate in Ochos Rios. Most of the countries in the Caribbean and the Americas make them in one version or another. Serve them with a favourite dipping sauce or salsa.

Choose your favourite sausage for this dish. We ate sausages at least once a fortnight when I was growing up, and Dad’s and my favourite was always the traditional Peach pork sausage. Now we are spoilt for choice with all manner of sausages. One I really like is the large European-style veal sausage with very little fat. Be sure to brown them before braising.
Carpetbag Steak with Spinach and Lemon Beurre Blanc
Beef and oysters are an irresistible combination. In this recipe the eye fillet steak is stuffed with fresh oysters, then cooked on a very hot grill so it is rare and the oysters are just warmed through. Serve with piles of wilted spinach and lemon beurre blanc, a much lighter butter sauce than béarnaise (it omits egg yolks), and the one that pairs beautifully with the oysters.
