When I travel overseas, there’s always plenty to inspire me. In Greece I enjoyed lovely shellfish from the Mediterranean, and also had superb olives and feta cheese. These experiences inspired this excellent ‘prepare ahead’ dish that can be served in individual dishes or as a large, hearty casserole. Choose large, juicy prawns that have been peeled but not cooked.

I created this recipe for a Christmas feature in Cuisine. It has all the hallmarks of a special dish, for it uses a selection of luxurious shellfish, and looks very showy on a large platter. I planned it so that all the seafood can be prepared and cooked the night before Christmas – but be sure to keep all shellfish refrigerated. Just before serving, toss together with the lemon segments, avocado and vinaigrette, and serve with slices of fresh crusty ciabatta to mop up every last drop of juice.

I got the idea for this recipe from the Shrimp & Anchovy Pate on the Kingfisher site www.kingfisher.co.nz.  I really like the cream cheese pate, but I also like more of a chunky dip.  I changed out the cream cheese for sour cream to match the freshness of the lime & coriander.

When I’m looking for barbecue ideas I often think of skewers. Colourful and simple to put together, this combination of spring onions and scallops has a lovely nutty flavour that comes from the combination of soy sauce and a touch of maple syrup.
