Oyster and Prawn Fritters with Caviar

Ingredients

12 fresh oysters, shucked
12 fresh large green prawns, shelled and deveined
½ red onion
2 tablespoons olive oil
small bunch flat-leafed parsley, chopped
2 tablespoons flour
2 eggs
salt and freshly ground black pepper
extra olive oil for frying
1 firm but ripe avocado
juice of 2 limes
salmon caviar to garnish (optional)
extra salt and freshly ground black pepper, to serve

Description

Another prefect little nibble to serve with drinks or before dinner on a festive occasion. Top the crisp fritters with avocado mash and a little salmon caviar for a luxurious treat.

 

Method

Chop the oysters and prawns into small chunks and place in a bowl. Peel the onion and chop very finely. Place the onion in a small plastic container with the olive oil and microwave for two to three minutes until the onion is softened. Cool and add to the chopped seafood. Add the parsley to the bowl with the flour, eggs and salt and pepper. Mix well to combine.

Heat about four tablespoons of olive oil in a heavy-based frying pan and when smoky hot, cook scant tablespoons of the mixture, about four fritters at a time. Remove fritters to kitchen paper and keep covered while cooking the remaining batter.

To serve, mash the avocado with lime juice, season well and top each fritter with mash and a little salmon caviar. Sprinkle with a little extra salt and pepper. Serve slightly warm.

Makes 18-20.
