Lime and Gin Mousse
I obtained this recipe from Kylie Adams, who owned the very good Rosehip Cafe, a favourite spot to meet friends as it was just around the corner from Cuisine’s former offices. The tart flavour of the chilled mousse is ideal for a summer dessert. To obtain a perfect mousse it is important for all the beaten ingredients to have the same soft texture.
Lychee and Ginger Sorbet
The sweet and subtle flavour of lychees and the tanginess of ginger combine beatuifully in this tasty cocktail. Reserve the juice from the lychees for use in another fruit cocktail later.

Pancakes with Honey and Creamy Yoghurt
A chef I admire for his stand on healthful, easy food is Raymond Blanc - one of Britain’s leading culinary lights – from Le Manoir aux Quat’Saissons near Oxford. I love the figs in his very good book Blanc Vite, and in this recipe I have served them on pancakes drizzled with yoghurt. The flavour of the figs is superb, and the dish makes a lovely healthy dessert.
