Lychee and Ginger Sorbet
Description
The sweet and subtle flavour of lychees and the tanginess of ginger combine beatuifully in this tasty cocktail. Reserve the juice from the lychees for use in another fruit cocktail later.
Method
Place all the ingredients in a food processor and process until smooth. Pour into a large shallow dish and freeze for at least 1 1/2-2 hours until frozen.
When ready to serve, transfer the mixture into a food processor and process until smooth. Serve immediately or freeze (although bear in mind that it does go rock solid when frozen - so you will need to thaw it slightly from frozen before serving).
