Dad's 3-egg Sponge

Dad's 3-egg Sponge

A good sponge, is the epitome of sweet lightness.

My Dad trialled many, many sponge recipes, but decided on this one to produce the lightest sponge.

Recently, I had a source of fresh duck eggs and when you use duck eggs you get a magnificently white sponge - it takes sponge making to a whole new level!

Dulce de Leche

Dulce de Leche

The classic Argentinian sweet, caramelised milk.  While it's really easy to make - it does take an hour of stirring - so you really need to be focussed & patient!

It's a bit like making caramel condensed milk at home!

Lemon Yoghurt Cake

Lemon Yoghurt Cake

A moist, lemony cake, which is a beautiful tea cake, served with a dollop of tart yoghurt!  This cake would also make a beautiful dessert served slightly warm, with a cold raspberry coulis.

Mrs Cook's Fruit Loaf

Mrs Cook's Fruit Loaf

Nothing reminds me more of a delightful morning tea than fruit loaf.  In a previous decade, I would have smothered this delight in softened butter, but these days, I am more interested in the mix of spice and sultanas.

Pikelets

Pikelets

A classic tea time treat.  Best enjoyed warm, fresh out of the oven.
