Mrs Cook's Fruit Loaf

Ingredients

42gm butter
1 cup cold water
3/4 cup sugar
225gm sultanas
1/2 tsp cinnamon
1/2 tsp mixed spice
1/2 tsp salt

1 1/2 cups flour
1 tsp baking soda
1 tbsp mixed peel

Description

Nothing reminds me more of a delightful morning tea than fruit loaf.  In a previous decade, I would have smothered this delight in softened butter, but these days, I am more interested in the mix of spice and sultanas.

Method

Boil the butter, water, sugar, fruit, salt & spices together for 5 minutes, then remove from the heat to cool.

Preheat the oven to 180C and grease a loaf tin.

When fruit mix has cooled, add the flour, baking soda and mixed peel.

Bake in a loaf tin for 45minutes, or until cooked.  If it begins to brown or burn on the top, cover with baking paper.  Be careful not to overcook it, as it will become dry!

Leave in tin for 10 minutes, before turning out on a wire rack to cool completely, before slicing.
