Pikelets
Description
A classic tea time treat. Best enjoyed warm, fresh out of the oven.
Method
Sift the flour, baking powder and salt into a bowl. In a separate bowl, beat the egg and sugar until thick. Mix the egg mixture into the flour mix, adding milk until just combined (don't overmix, as this will make a tough pikelet). Spoon tablespoons of batter onto a hot pan (lightly greased if non-stick).
When the pikelets begin to bubble on one side, turn over to brown the other side.
