Scones
Description
A classic snack for morning or afternoon tea. To be enjoyed with a dollop of fine raspberry jam. Or make cheese scones and pack a couple for a snack on a short hike.
Method
Preheat the oven to 220C and lightly dust an oven tray with flour.
Sift dry ingredients into a bowl. Using a knife, chop the butter into dry ingredients until it begins to look like breadcrumbs. Mixing quickly with the knife, add enough of the milk form a dough. Knead the dough. Press scone dough onto a lightly floured surface and then cut into even size squares. Or use a cookie cutter to get round scones.
Place the squares onto the prepared oven tray. Brush the surface of each square with a little milk.
Bake for 220C for 10 minutes or until golden brown.
CHEESE SCONES
Add 1 cup of grated cheese to the flour, after cutting in the butter. Mix through the dry ingredients. It can be a good idea to reduce the cheese content, by using a stronger cheese, such as grated Parmesan.
