Superb Chocolate Cake
Description
Ice with chocolate or mocha icing if you wish. For a shiny look to an icing, use hot or boiling water to mix the icing sugar to a spreadable icing. If you are using butter in your icing, the hot water will help melt it and make it a smooth mixture ready for spreading.
Method
Melt butter in a saucepan large enough to mix all ingredients. Mix in sugar. Remove from heat. Beat eggs and milk together. Add to butter mixture with sifted flour, cocoa and baking powder. Mix to combine.
Pour into a 20-cm diameter round cake tin with a baking paper-lined base. Bake at 180C for about 45 minutes or until cake springs back when lightly touched. Cool for 10 minutes in tin before turning onto a cooling rack. Place a plate under cooling rack. Spoon Coffee Syrup over and leave to cool.
COFFEE SYRUP
Bring coffee and sugar to the boil, stirring until sugar dissolves. Mix in butter until melted. Remove from heat.
