Colourful Turkey Tenderloin Summer Salad
Description
Crumble over feta cheese and sprinkle with freshly herb leaves.
Add mint or whole grain mustard to your dressing for added zing!
Method
Season turkey tenderloins.
Heat oil in a frying pan and cook turkey 4-5 minutes each side until golden and cooked through. Set aside to rest.
In a large serving bowl combine diced vegetables and salad leaves.
Cut turkey into chunky slices and toss through salad. Drizzle with dressing just before serving.
Dressing - combine 2 tablespoons lemon juice, ¼ cup olive oil, 1 tablespoon honey, sea salt and cracked pepper
