Stir-Fried Ginger Chicken with Sugar Snaps

Ingredients

1 tablespoon light cooking oil
500g chicken schnitzel, sliced
2 cloves garlic, sliced
1 tablespoon grated fresh ginger
150g sugar snap peas
2 tablespoons oyster sauce
1/4 cup Chinese cooking wine or sherry
1 teaspoon sesame oil

Description

Delicious and so simple! The sugar snap peas bring a lovely crunchy texture to this dish.

Method

Heat the oil in a frying pan over a high heat.  Stir-fry the chicken in two batches until golden brown.  Remove the chicken from the pan and set aside.  Add the garlic, ginger and sugar snaps to the pan and cook for 1 minute.

Return the chicken to the pan along with the oyster sauce, cooking wine or sherry and sesame oil and stir-fry for 2 minutes or until the sauce has thickened slightly.

Serve with rice or rice noodles.
