Spicy Baked Chicken

Ingredients

3 tablespoons Red Curry Paste
1 tablespoon light coooking oil
1 kaffir lime leaf, finely shredded
1 tablespoon sesame seeds
2 tablespoons chopped fresh coriander
8 chicken pieces

Description

I love these chicken pieces infused with tasty Thai flavours.  You can also use chicken nibbles to make delicious party snacks.  Serve hot or cold.

Method

Preheat oven to 180C.

Put all the ingredients except the chicken in a bowl and stir to combine.  Add the chicken pieces and stir to ensure they are evenly coated.

Line an oven tray with foil.  Arrange the chicken in a single layer on prepared oven tray and spread on any remaining paste.  Bake for 40 minutes or until the juices run clear.

Serve with rice and salad.
