Chicken Schnitzel with Mozzarella, Red Capsicum and Basil Stuffing
Description
These treats can be served as a substantial party snack - they're easy to eat with your fingers when they have cooled down.
Method
Preheat oven to 200C.
Lay each slice of schnitzel on a board. Place a few strips of capsicum, some mozzarella strips and a few basil leaves on one end of each piece. Roll up, pinwheel style, and secure with a toothpick.
Place the schnitzel rolls into a baking dish. Drizzle with olive oil, sprinkle with dried herbs and season with salt and pepper. Bake for 20-25 minutes or until the chicken is cooked through.
Garnish with basil leaves and serve immediately.
