In 1993 I went on a foodies’ trip to Oaxaca in southern Mexico. The food was a total revelation, and not a single meal resembled anything I had thought Mexican food might be. It was the spices, chillies and herbs that really surprised me, and whenever I visit the United States now, I try to get to a good Mexican restaurant to taste those flavours again.

There's something special about food that has been wrapped and cooked in little parcels - the aroma released when the parcels are opened gets me salivating very time.  You can cut the wrappers from banana leaves, corn husks or baking paper and assemble the parcels up to 24 hours before required.  Store in the fridge.  Pepes ayam makes a great addition to a buffet.

A wonderful steak sandwich is probably the thinking foodie’s hamburger. These sandwiches are a real treat for friends and family as the beef is roasted ahead, kept warm, sliced thinly and served with candied braised shallots, a light red wine sauce and watercress on crusty sourdough. Yum!

Vincotto is a rich, sweet fruit vinegar made with grapes from Lecce in Italy.
