Mexican-Style Pork Mince Wraps

Ingredients

10 soft corn tortillas
2 tablespoons olive oil
1 onion
2 cloves garlic
1 tablespoon Latin spice rub (I use Zarbo’s, but you can make a mix of chilli, cumin and fennel seeds in equal quantity, and pound them into a mortar)
500g pork mince
2 x 440g cans tomatoes in juice
2 tablespoons tomato paste
2 tablespoons chopped fresh thyme
2 tablespoons chopped fresh parsley
sour cream to serve
avocado to serve

Description

In 1993 I went on a foodies’ trip to Oaxaca in southern Mexico. The food was a total revelation, and not a single meal resembled anything I had thought Mexican food might be. It was the spices, chillies and herbs that really surprised me, and whenever I visit the United States now, I try to get to a good Mexican restaurant to taste those flavours again.

This recipe is a take on Mexican burritos, for true Mexican spices are hard to find in New Zealand, but the subtly spicy tomato-flavoured pork filling is very tasty. It’s great food for feeding a hungry crowd and the added avocado and sour cream make it a complete meal in your hand.

 

Method

Wrap the tortillas in foil, and preheat the oven to 180°C. Heat the olive oil in a large, heavy saucepan and chop the onion and garlic finely before adding the hot oil.

Cook gently for five minutes, then add the spice rub and, over a gentle heat, allow the flavours to become rich and toasty. Add the pork mince to this mixture and stir well until the mince starts to brown.

Mash the tomatoes well and add to the browned mince with the tomato paste and the chopped herbs. Simmer all ingredients together for 20 to 30 minutes, stirring occasionally until well cooked. If the mixture is in danger of drying out, add a little water. Season to taste.

Leave to stand, covered for about 10 minutes before serving. Meanwhile heat the tortillas in the oven for 10 to 12 minutes.

To serve, spoon two tablespoons of mince mixture into the middle of each heated tortilla, roll up and add a dollop of sour cream and slices of avocado.

Makes 10.
