Cannelini Bean Hotpot

Ingredients

1 onion, diced
2 cloves of garlic, finely chopped
2 sticks of celery, finely diced
1 tsp dried mixed herbs
1-2 tsp tomato puree
1/4 tsp cayenne pepper or chilli flakes
1/2 tsp worcestershire sauce
a pinch smoked paprika
1 400g tin crushed tomatoes
1 400g tin of cannelini or borlotti beans, drained and well rinsed
1 large handful of chopped parsley
salt & pepper

Description

A winter warmer that can be prepared ahead of the rest of your dinner, and left to rest until you are ready to serve the other elements of your meal.

It uses tinned tomatoes and beans, so keep these in your pantry for an easy, no fuss side dish or base for chicken or fish.

Method

This dish can be cooked and left to wait until all the other elements of your dinner are ready, so prepare this dish ahead to let the flavours meld and then reheat and freshen at the end with a handful of chopped parsley.

Sweat onion and garlic in a frypan with some olive oil, until translucent, then add celery and mixed herbs and cook until celery just cooked.

Add tomato puree, cayenne pepper, worcestershire sauce, smoked paprika and crushed tomatoes.  Season to taste.

Bring to a low simmer and simmer for 2-3 minutes to meld all of the flavours, then add drained and rinsed beans.

Simmer over a low-moderate heat, for about 10 minutes.  Keep pot on low until you are 5 minutes from serving.

When 5 minutes from serving return the pot to simmer and add handful of fresh parsley while heating through.
