Tofu Fritters

Ingredients

2 cloves garlic
3 teaspoons grated fresh galangal
2 teaspoons dried turmeric
1/4 teaspoon shrimp paste
1 large red chilli, deseeded
250g firm tofu, cubed
1 egg, lightly beaten
2 kaffir lime leaves, shredded
3 teaspoons grated palm sugar
1 tablespoon fried shallots
1/2 teaspoon sea salt
1/2 cup light cooking oil

DIPPING SAUCE
1 red chilli, deseeded and chopped
juice of 1 lime
1/4 teaspoon salt
1 tablespoon grated palm sugar

Description

This recipe has been adapted from one used at the Casa Luna Cooking School in Ubud and even if your're not a big fan of tofu you'll love thse tasty treats.

Method

Place the garlic, galangal, turmeric, shrimp paste and chilli in a food processor and process to form a smooth paste.  Add the tofu and process to form a chunky paste.  Stir in the egg, lime leaves, palm sugar, fried shallots and sea salt.

Heat the oil in a heavy-based frying pan over medium heat.  Fry the fritters, a tablespoon at a time, until golden brown on both sides - you may need to do this in batches to prevent overcrowding and cooling of the oil.

Remove fritters from the pan and drain on paper towels.

To make dipping sauce, combine all ingredients in a small bowl and mix well.

Serve fritters immediately with dipping sauce of the side.
