Seasonal Greens Turkey Thigh Stir-fry
Description
Add udon or egg noodles with the greens for a substantial meal.
Method
Cut turkey into thick strips.
Heat sesame oil in a wok or heavy frying pan and sear turkey, onion, garlic and ginger for 4-5 minutes until fragrant and golden. Add bok choy, snow peas, broccoli florets and chicken stock and simmer 2-3 minutes until wilted and bright green.
Toss through sweet chili sauce and soy.
Tip: serve in a large shallow bowl and top with crunchy bean sprouts or cashew nuts
