Green Bean and Roasted Coconut Salad with Chilli Lime Dressing

Ingredients

SALAD
200g green beans, blanched
1/2 red onion, thinly sliced
1 tablespoon long thread coconut (or dessicated coconut if long thread is unavailable), toasted

DRESSING
juice of 1 lime
1/2 teaspoon crushed red chilli
1 teaspoon sesame oil
1 teaspoon rice wine vinegar

Description

This is a delicious blend of crisp beans and coconut, charged with a tangy lime dressing that will make your taste buds tingle.

Method

To assemble the salad, put the beans, onion and coconut in a bowl.

To make the dressing, put all teh ingredients in a bowl and stir to combine.

Pour the dressign over the salad and toss gently to combine.

Serve immediately.
