Cucumber Salad
Servings: 4

Ingredients

1 telegraph cucumber, with skin on
1-2 cups salad leaves
ΒΌ cup balsamic vinegar
2 Tbsp chopped fresh herbs (e.g. coriander, Italian parsley, thyme)
freshly ground black pepper to taste

Description

Salads don't have to be complicated to taste and look great.

Method

Slice cucumber lengthwise with either a cheese slicer or a vegetable peeler.
Arrange lettuce on serving dish.
Place cucumber slices on top.
Drizzle with balsamic vinegar.
Sprinkle with fresh herbs and season with pepper. Serve.
