Vegetable Kebabs

Ingredients

Use a mixture of the following vegetables:
small or pickling onions, peeled and precooked for 7-9 minutes
new (waxy) potatoes, precooked for 7-9 minutes
egg plant, cut into bite-sized pieces
courgettes, cut into bite-sized pieces
red, yellow or green peppers, deseeded and cut into chunks
cherry tomatoes
button mushrooms

Basting mixture for kebabs:
2 Tbsp vegetable oil
ΒΌ cup fruit juice
2 Tbsp soy sauce
1 clove garlic, crushed

Description

Kebabs are a great way of presenting several different vegetables. Be generous with the amount on each kebab. If using bamboo kebab sticks, soak them in water for about 30 minutes before threading with the vegetables.

Method

Thread vegetables onto presoaked kebab sticks.
Brush with the basting mixture.
Barbecue or grill for 8-10 minutes turning and brushing with oil or basting mixture frequently.
The time taken to cook the kebabs will depend on the size of the pieces of food and the heat of the grill or barbecue.
The kebabs are cooked when they are golden brown – don’t let them dry out.
Serve with hummus.
