Tomato Couscous Salad

Ingredients

1 cup couscous
1 cup boiling water
5 tomatoes, chopped
1 cup chopped fresh parsley
ΒΌ cup chopped fresh mint leaves

Dressing:
2 cloves garlic, crushed
3 Tbsp lemon juice
1 Tbsp sugar
1 Tbsp light olive oil
freshly ground black pepper to taste

Description

A great any-season salad that is quick and easy to make.

Method

Soak couscous in water for about 5 minutes until water is completely absorbed.
Combine couscous, tomatoes, parsley and mint in a bowl and toss gently.
Mix garlic, lemon juice, sugar, oil and pepper together.
Drizzle dressing over the salad and toss gently.
