Crunchy Green Salad
Servings: 4

Ingredients

3 cups finely sliced green cabbage
2 spring onions, sliced
¼ cup finely chopped fresh mint
3 tomatoes, cut in wedges

Dressing:
2 Tbsp light olive oil
2 Tbsp lemon juice
½ tsp ground cumin
1 tsp sugar

Description

Coleslaw is another name for a salad based on raw cabbage. This coleslaw classic is an old favourite.

Method

Place cabbage, onions and mint in a large bowl.
Blend oil, lemon juice, cumin and sugar together.
Pour over salad.
Mix thoroughly.
Decorate with tomato wedges and serve.
