Meditteranean Avocado

Ingredients

2 firm ripe avocados
Choose from a selection of Mediterranean flavours e.g.
sundried tomatoes, peppers, olives, capers or anchovies
feta or goats cheese, or brie wedges
fresh basil leaves or pesto
shaved salami or prosciutto ham (optional)
artichoke hearts
2 Tbsp vinaigrette or pesto dressing (optional)

Description

Delicious as a lunch or an entrée. Buy avocados green and allow to ripen slowly.

Method

Halve and de-stone the avocados.
Take a thin slice off the base of each half so they sit flat.
Arrange on a serving platter.
Generously pile chopped fillings into the centre of, and over each avocado half.
Drizzle with vinaigrette.
Serve at room temperature, with salad greens and crusty bread rolls.
