Asparagus stir fry

2 Tbsp vegetable oil
2 bunches asparagus, cut into generous bite sized lengths
4-5 small courgettes, cut in chunky slices
1 cup adzuki or crunchy combo sprouts

The sprouts in this wonderfully easy stir fry give a lovely nutty flavour and texture.


Heat oil in a non-stick pan, or wok.
Sauté asparagus for 1 minute.
Add courgettes and sauté until just tender.
Toss in sprouts and serve.
