Feta and Caper Mash
Servings: 4

Ingredients

4 large floury potatoes, peeled and cut into even-sized pieces
¼-½ cup milk
2 Tbsp olive oil
½ cup capers or olives
¼ cup sliced sun-dried tomatoes
¼ cup marinated feta cheese
¼ cup finely chopped fresh parsley or chives
salt and freshly ground black pepper to taste

Description

This delicious flavoured mash is great with pan fried fish.

Method

Boil, steam or microwave potatoes until tender.
Add milk and oil, and mash.
Add extra milk if necessary to make potatoes smooth and creamy.
Mix in capers, sun-dried tomatoes, feta and herbs.
Season to taste with salt and black pepper.
