Standard Vegetable Stock

Ingredients

8 Onions- Chopped and peeled
8 Carrots-Chopped and peeled
2 stalks of celery- Chopped
4 leeks- chopped
2 lbs mushrooms- chopped
10 cloves garlic
2 Tbsp peppercorns
4 bayleaves
5 gallons of water
12 sprigs parsley
6 sprigs thyme

Description

Easy Veggie stock for restaurant use

Method

Sweat vegetables in a large pot


Add water ,peppers bayleave, and garlic


simmer one hour


off heat, steep herbs and cover 20 minutes


strain and serve.
