Grilled Nectarines with Vanilla Ricotta

Ingredients

GRILLED NECTARINES
3 tablespoons caster sugar
6 firm ripe nectarines, halved and stones removed

TOPPING
1 1/2 cups ricotta
2 tablespoons cream cheese
1 teaspoon pure vanilla essence
1/4 cup caster sugar

Description

This dessert is so simple it barely requires a recipe!  Because it's so simple, try to use good quality ingredients so that the flavours really stand out.

Method

To grill the nectarines, sprinkle the caster sugar on a saucer and dip each nectarine half, flesh-side down, into the sugar.  Place the nectarine halves sugar-side down on a preheated barbecue hotplate or grill plate.  Cook them slowly until the sugar begins to burn.

To make the topping, whisk together the ricotta, cream cheese, vanilla and sugar until smooth and creamy.

Top each nectarine with a generous dollop of vanilla ricotta topping and serve immediately.
