Quick Pear and Apricot Tarts

Ingredients

2 sheets pre-rolled puff pastry
4 fresh or poached pears
8 dried apricots, soaked in a little boiling water
small jar apricot jam, heated to melt

Description

This is a nifty way to make an easy dessert at a moment’s notice if you have puff pastry in your freezer. Use pre-rolled puff pastry for the base, then top the pastry with fresh or poached pears and pre-soaked dried apricots for a great flavour combination, and glaze with plenty of apricot jam. Serve with a bowl of softly whipped cream.

 

Method

Defrost the pastry and cut each piece in half down the middle. Now cut each strip at 90 degrees into three pieces, so that you have enough for 12 little tarts. Carefully make decorative cuts at the shorter ends of each rectangular strip and brush with a little melted apricot jam. Place the pastry strips on a baking tray. Preheat the oven to 200°C.

Peel and core the pears, cut into slices and place three to four slices in the centre of each piece of pastry. Chop the apricots into thick slivers and dot over the pears.

Cook the tarts until golden. This should take about 10 to 12 minutes. When you remove them from the oven, brush the tarts generously with heated, melted apricot jam. Cool and serve while crisp.
