Chocolate Potato Truffles

Ingredients

1 peeled, medium-sized potato (waxy, boiling type potato)
1 1/2 cups chunky dessicated coconut (plus 1/4 cup extra for decorating)
1 1/4 quarter cups icing sugar
2 Tablespoons cocoa
20g NZ butter

Description

This Chocolate Truffle recipe is fabulous. Make sure you choose a waxy potato as this texture, mixed with chocolate, makes it the perfect hold-together sweet dessert.

Method

Boil the diced potato until tender (10-12 minutes).
Mash and add the butter, then smash until the butter is melted through.
To this, add the icing sugar and coconut and combine well.
Add the cocoa and mix well again.
Roll teaspoon sized amounts in your hand and mould into a small ball.
Roll the truffle in extra dessicated coconut and place on a platter or tray.
Chill in the fridge for one hour.

Serve with hot coffee or an after dinner liqueur.
