Ingredients

½ cup yoghurt – plain, unsweetened
1 cup grated cucumber (no need to peel it)
½ tsp salt
2 cloves (or to taste) garlic, grated
1 Tb chopped fresh mint or dill
1 Tb extra virgin olive oil

Description

A cooling yoghurt, cucumber and mint sauce.

Method

Squeeze excess liquid from grated cucumber (between your palms or using a tea-towel).

In a bowl mix the drained cucumber with the remaining ingredients. Taste and adjust seasonings as required.
