Lemongrass Slushy

Ingredients

2 discs palm sugar (or 4 tablespoons caster sugar)
1/4 cup water
2 stems lemongrass, smashed with a rolling pin
crushed ice
1 litre soda water
lime wedges to serve

Description

If you need a refreshing drink on a hot day it's hard to go past a lemongrass slushy.

Method

Put the sugar and water in a small saucepan and simmer until the water has reduced a little and the mixture has thickened slightly.  Add the lemongrass and continue to simmer for 5 minutes.  Set aside to cool.

Fill glasses with crushed ice and pour over soda water, add 1 tablespoons (or to taste) of syrup and stir.  Top with lime wedges.

MAKES APPROXIMATELY 1 LITRE
