Parmesan Crumbed Turkey Tenderloins with Red Currant Jelly

Ingredients

500g Turkey Premium Tenderloins
2 eggs, lightly beaten
2 cups breadcrumbs
½ cup grated parmesan
Zest of one lemon
Salt and pepper
Oil for frying

Method

Mix together the breadcrumbs, parmesan, zest and seasoning.

Dip each tenderloin into egg then dredge through the crumbs.

Heat oil for a shallow fry in a heavy based pan. Fry each until golden, firm and cooked through, turning once.

Serve with red currant jelly.
