Red Capsicum, Orange and Olive Salad

Ingredients

DRESSING
1/4 cup extra virgin olive oil
2 tablespoons lemon juice
1 clove garlic, crushed
1/2 teaspoon ground cumin
1/2 teaspoon salt

SALAD
3 red capsicums, roasted, peeled, deseeded and sliced
2 large oranges, peeled, halved and sliced
1 small red onion, thinly sliced
3 tomatoes, sliced
1/2 cup green olives
2 tablespoons chopped flat leaf parsley

Description

This delicious and colourful salad is perfect with Orange and Rosemary Chicken.

Method

To prepare the dressing, combine all ingredients and set aside until required.

Place the capsicums, oranges, red onion, tomatoes and olives into a salad bowl. Add the dressing and toss gently. Sprinkle with the chopped parsley.
