Courgette Loaf
Description
A delicious loaf which can also be made with carrots in place of the courgettes.
Method
Lightly spray a 20 x 10 cm loaf tin with vegetable spray and line with baking paper. Preheat oven to 180C.
Beat the eggs, sugar and vanilla until creamy. Add courgettes and oil and mix well.
Sift flour, baking soda, garam masala together and stir into the courgette mixture. Mix in nuts and pour into prepared tin.
Bake in preheated oven for about 45 minutes or until golden brown on top and firm to the touch.
Leave to cool in the tin. Turn out, slice and serve.
