Ingredients

1 Tbsp vegetable oil
6 cups assorted green vegetables (Choose vegetables from: quartered Brussels sprouts, roughly chopped spinach and cabbage, finely sliced leeks, green beans, pepper, celery and asparagus, broccoli florets, Asian greens)
3 Tbsp finely chopped fresh herbs (e.g. coriander, chives, parsley, basil, marjoram, mint, dill)
2 Tbsp lemon juice
freshly ground black pepper

Description

This is a great way to present green vegetables, try with asparagus and serve cold.

Method

Heat oil in a large pan or wok.

Add vegetables (excluding green leafy ones) and stir fry for 3-4 minutes or until tender but still slightly crisp.

Add green leafy vegetables (if using them), herbs, lemon juice and black pepper. Stir fry for another 1-2 minutes.

Serve immediately.
