Brussels Sprouts with Orange Sauce

Ingredients

10-12 Brussels sprouts
1 Tbsp margarine or light olive oil
1 Tbsp grated orange rind
¼ cup freshly squeezed orange juice
1 Tbsp sugar
¼ tsp ground ginger
2 Tbsp finely chopped fresh parsley
½ tsp cornflour

Description

This hot orange sauce is great over other cooked green vegetables, try it with broccoli, courgettes, beans or asparagus.

Method

Cut a small cross in the base of each sprout.
Boil for 5-10 minutes or until tender and drain. Keep hot.
Melt margarine in a separate saucepan.
Add all remaining ingredients, blend well. Heat gently and stir frequently until thickened.
Pour the sauce over the Brussels sprouts.

Microwave:
Place Brussels sprouts in a microwave proof dish, add 2 Tbsp water.
Cover and cook on high power for 6-8 minutes.
Cook margarine on high power for 30 seconds. Add remaining ingredients and cook on high power for 1 minute. Stir well.
