Zesty Citrus Chicken Stir-fry with Asian Greens
Description
The surprise addition of orange zest and juice gives this stir-fry a wonderfully exostic fragrance.
Method
To make the stir-fry, heat the oil in a frying pan and add the chicken thighs. Cook over medium-high heat until golden brown - don't move them around too much as this slows the browning process.
Add the garlic to the pan and cook for 1 minute. Add the lime and orange zests and juice, soy sauce, honey and sesame seeds. Stir-fry for a further 2 minutes or until the chicken is cooked through. Remove the chicken from the pan and keep warm.
Meanwhile, to cook the greens, add oil and garlic to the pan and cook over medium-high heat for 1 mintue. Add a little water to the pan and then the vegetables. Stir-fry for a few minutes until they have just wilted - if you are in a hurry cover them with a lid to speed the wilting.
Serve with long-grain rice.
