Tomato Pesto Flat Pies
Description
The ultimate easy and delicious pie. Use small tomatoes and cut into smaller squares and serve as a nibble or snack. Served with a leafy salad, these pies are a very quick meal.
Method
Preheat oven to 200°C.
Cut each pastry square into four. Place on baking trays.
Spread the pesto over the pastry.
Top with remaining ingredients.
Bake in preheated oven for 10-12 minutes or until nicely browned.
Variation: Make smaller using cherry tomatoes as pass-arounds.
