Spinach with Anchovies and Pine Nuts

Ingredients

1 Tbsp vegetable oil
2 anchovy fillets
2 Tbsp chopped fresh parsley
1 bag baby spinach
3 Tbsp sultanas or currants
4 Tbsp pine nuts
salt and freshly ground black pepper to taste

Description

This delicious combination of anchovies, sultanas and pine nuts combined with spinach is stunning served over pasta.

Serves 2-4

Method

Warm oil in a heavy based frying pan.
Add anchovies and parsley and stir fry for 2-3 minutes over a medium heat.
Add spinach, sultanas and pine nuts.
Stir fry until heated through and spinach is glossy and well mixed.
Serve immediately.
