Salad Nicoise
Servings: 4

Ingredients

2-3 mini cos lettuce
2 spring onions or shallots, sliced
1 x 185g can of tuna in spring water, drained
8 anchovy fillets, drained
12 black olives, pitted and cut in half
4 hard-boiled eggs, peeled and quartered
handful of small sprigs of fresh parsley or basil
4 tomatoes, cut into wedges
100g small green beans, freshly cooked

Dressing:
2 cloves garlic, crushed
2 Tbsp white wine vinegar
½ cup lite olive oil
salt and freshly ground black pepper to taste

Description

This delicious salad can be served as a main dish or as an accompaniment.

Method

Place lettuce leaves on serving plates.
Add rest of salad ingredients.
Make dressing by putting garlic, vinegar, oil and seasoning into a bottle and shaking.
Pour over salad just before serving.
