Courgette fritters

Ingredients

2 eggs
½ cup self raising flour
2 cups grated courgette
1 Tbsp grated lemon rind
1 Tbsp finely chopped fresh mint
¼-½ cup milk
1 Tbsp vegetable oil

Description

This is a great way to use up excess courgettes. The fritters taste delicious served with tomato salsa.

Method

Separate eggs.
Beat egg whites until soft peaks form.
Add yolks and beat lightly.
Fold in flour, courgette, lemon rind and mint.
Add sufficient milk to make a soft batter.
Heat oil in a non-stick pan.
Spoon in portions of the mixture to make fritters.
Turn over once mixture bubbles, cook other side until it is golden brown.
Place on a paper towel and keep warm until the whole batch has been made.
Serve with a green salad and tomato salsa (recipe elsewhere on site).
