Asparagus Frittata

1 Tbsp vegetable oil
1 bunch asparagus, sliced
1 large onion, finely chopped
2 rashers bacon, finely chopped
4 eggs
1 cup grated tasty cheese

A tasty versatile meal that can be served hot, warm or cold.


Preheat oven to 200°C.
Heat oil in a heavy based pan.
Sauté asparagus, onion and bacon for 4-5 minutes or until onion is golden brown.
Line a 20 cm square baking dish with baking paper and spray with oil.
Arrange vegetables in dish.
Beat eggs and pour over the vegetables.
Sprinkle with cheese.
Bake in preheated oven for 20-25 minutes or until mixture is set and golden brown.
Serve hot, warm or cold.
