Joyce's Wicked Pav Roll
Description
I love pavlova, the Kiwi sweet treat. But to be honest, I can take or leave it. This pavlova recipe, however, has changed me. This is Pavlova in a much funkier, easier, better way!
Eaten over Christmas and passed on from Bach neighbours in the Coromandel, this pavlova roll is just too good to describe. Soooo easy to make too! Tackle it for the festive season. People will be vey impressed.

Method
Beat 3 egg whites
Add 1 1/2 cup caster sugar
Add 1 teaspoon vinegar
Add 1 teasoon vanilla
Add 3 Tablespoons water
Beat lightly.
Put into a swiss roll tin lined with baking paper.
Sprinkle with 1/4 cup sugar mixed with ¼ cup dessicated coconut flakes (similar to what you see on lamingtons).
Bake at 150 degrees celcius for 15mins. Do not use the fanbake option if you have one, just normal bake.
Tip onto tea towel on a rack.
Peel off paper.
Allow to cool.
Spread with whipped cream. Roll up.
ENJOY WITH STRAWBERRIES!
