Roast Potatoes with Fresh Bay Leaves


Peeled potaotes for roasting
Olive oil or duck fat
Salt and freshly ground black pepper
A handful of fresh bay leaves

Cut each bayleaf into three lengthways
Make a slit in the potato and leave the small knife in the cut.
Gently insert a piece of bay leaf into the cut and the remove the knife.
Repeat so that each potato has four or five slithers of bay leaf inserted into five paralell slits. 
When all the potatoes are complete, roast the potatoes as normal.

These look fanatastic and are gently perfumed when they are roasted.
