Watercress Salad

Ingredients

2 cups watercress, big stalks removed
juice of 1 lemon
2 tablespoons good-quality avocado or olive oil
1/4 cup unsalted roasted almonds, roughly chopped
2 oranges, pith removed, cut into segments

Description

Salads should be simple - most people make the mistake of adding too many ingredients.  The pleasure from eating something unfussy should not be underestimated.

Method

Put all the ingredients in a salad bowl just before serving and toss gently to combine.
