Ingredients

Green Capsicums -5-6medium sizes
Potatoes Boiled & Mashed -2-3
Dry mango powder (amchur) - 2 teaspoon
Red chili powder - 1 1/2 teaspoon
Coriander powder -1 teaspoon
Garam masala powder- 1 teaspoon
Onion sliced-1 large
Ginger chopped- 1 piece
Green chillies chopped-3
Fresh coriander leaves finely chopped
Salt to your taste
Oil- 2-3 tbsp.

Method

Wash the capsicum, Take one capsicum at a time and with a sharp knife cut the stem out and gently slice off the top, save it for the cap. Remove all the seeds and membranes from the capsicum. Keep them aside. 

Heat a oil in a pan.

Add sliced onions and sauté them for 5 to 6 minutes (light brown)

Add mashed potatoes, salt, coriander powder, red chili powder and mango powder.

Cook for 5 mins.

Now stuff the capsicum with the potatoes mixture.

Heat oil in a pan and place the stuffed capsicum in the pan.

Cover the pan and allow the stuffed capsicum to cook on a low flame.you will have to check often after every 5 to 6 mins and keep on changing the sides of the capsicum, so that all sides are cooked well. check, turn the sides and cover the pan again.

You also have to place the open potato side touching the pan. The capsicum will get golden and wrinkled.

Continue to check, change the sides and then cover again till the capsicum are cooked well. It took me about 25 mins to cook these on a low flame.

 

Note:  In stuffing you can add paneer.

 

            For Garnishing add grated cheese & coriander leaves.
