Creamy Polenta

Ingredients

2 cups chicken stock
2 cups milk
1 cup instant polenta
1/2 cup grated Parmesan
2 teaspoons butter
freshly ground black pepper

Description

Polenta is a staple of northern Italy.  It is good as a side dish to a main, but can also be served as a first course.

Method

Heat the chicken stock and milk in a saucepan.  Bring to the boil and add the polenta in a steady stream, stirring constantly.  Simmer for 3-4 minutes or until it is thick and creamy.  Stir in the Parmesan and butter and season with pepper.

Serves 4-6
